  • 1 pinch of salt
  • 1 teaspoon cinnamon
  • Lemon zest (optional)
  • 150 g powdered sugar
  • 2 to 3 tablespoons lemon juice
  • Preheat the oven to 180°C
  • Separate the egg whites from the yolks
  • Whisk the yolks with the sugar until the mixture is frothy
  • Add the grated carrots, almonds, flour, baking powder, and cinnamon
  • Beat the egg whites until stiff peaks form with a pinch of salt
  • Gently fold them into the mixture
  • Pour into a buttered pan
  • Bake for 40 to 45 minutes
  • Let cool before adding the frosting
